Beware the Bones
Chinese love bones in their food. I am not just making an observation that there are bones in everything, but, instead, I am relating something that has been told to me by many locals. In fact, most of my friends will not even eat chicken breast without the bones. As a western who is not used to having bones in their food, one must be careful. I have eaten fish, eel, snake, frog, chicken, duck, pork and lamb, at least, all with bones. With snake, it is very easy, for example, to put a chunk into your mouth and suck off the meat. With some other meats you have to be careful not to bite into an unexpected bone and break a tooth. Fish, to me, is the most dangerous. In fact, the first time I ordered fish, it was chopped into little pieces, breaded and fried, and when I put a piece into my mouth and began to chew I had bones piercing my tongue and the roof of my mouth, unexpectedly. Since then, I have always been careful.
So, if you visit China, beware of the bones.
